My own mother once called me a "potato ho" in the middle of a crowded restaurant. 

That's how committed I am to the potato lifestyle. 

I mean, you know a particular food item is good when it single-handedly almost wiped out an entire populace and is still worshiped by said populace. 


They say now that eating a lot of potatoes ( and pasta and rice) can actually be GOOD for you, because they fill you up and you're less likely to consume fatty snacks afterwards - therefore consuming less calories overall. LET US REJOICE.

Here are 10 of my favorite ways to eat potatoes:  

1. Roasted red potatoes 

Add a big ol' dollop of sour cream and you've got yourself a slice of heaven, my friend.

2. Fries

Do I really need to explain French fries? Make 'em at home - with or without the cilantro.

3. Colcannon

Because the only way to make mashed potatoes better is to add bacon. This traditional Irish dish takes your ordinary taters to a whole new level.

Did you know you can make these at home?! A little extra effort, but SO worth it.

My go-to dish to take to any gathering, especially in the summer. I don't know why, but red potatoes make the best potato salad.
